Food for Thought: Living our UU Principles for Food and Environmental Justice

Food is central to all our lives, and we spend a great deal of time making grocery lists and shopping for our food every week or grabbing fast food on the run. But do we really think about what goes into getting that food to our plates, the lives it touches, the resources used to produce it, the impacts it has on our environment, and the effects it has on our health and the health of the planet? Usually, we don’t think about it in that much detail. It’s pretty much an habitual set of activities we go through to get ourselves fed each day. This Sunday’s service will take us on a journey of the thought processes that could, and probably should be taking place every time we sit down for a meal. Linda and Ed Oaksford will do this through lived experience, group experience, guidance from our denomination, and reflection of our UU Principles that consider connections to all beings and ecosystems on our planet and finally our approach to transformation as it relates to our responsibility to live sustainably on our beautiful blue planet.

Linda and Ed Oaksford have been members of UUCT for over 30 years. Linda’s background is in Education having worked as a public-school teacher and administrator. Ed’s background is in Science research and administration. Linda is a Food for Life Instructor for the Physician’s Committee on Responsible Medicine and Ed holds a Certificate in Plant-Based Nutrition from the T. Colin Campbell Center for Nutrition Studies at Cornell University. 

They have three grown children who have come up through the ranks of UU RE and the OWL programs. Their eldest having provided two delightful grandkids. They have both been active in the church over the years serving in various positions, such as Board Secretary, and numerous committees including, Program, Ministry, Ministerial Search, Membership, Green Sanctuary, Audio/Visual, Nominating, and Religious Education. Lately, over the last four years, Linda has been facilitating the Food for Thought discussion group under the wings of our Green Sanctuary Committee. Linda and Ed will be leading the service today. The title of their service, not surprisingly, is Food for Thought and they will be discussing our denomination’s role in Food and Environmental Justice.
